Mangalitsa, or Mangalica pork, is hard to find in your stores and I am sure that before 10 years ago, it would have been impossible to find in the states. This imported pig is just now gaining popularity in the United States. As many consumers find themselves wanting a more flavorful pork, chefs are turning to this fat-marbled pork. So where did this pig come from and why does it taste so much better?
During the 1800's this hairy porker was one of the most commonly raised pigs, but with the downfall of lard based products an
d a boom in vegetable oils, this lard based pig almost went extinct! So why are they making a comeback now? Many chefs know that it takes real ingredients to make great flavor. Like Chef Zach Sterner of Twelve28, chefs are bringing back old world flavor by cooking with old world pork. This new twist on old flavors have foodies going crazy! And for good reason. Prior to 2007, there were absolutely no Mangalitsas in the United States. Heath Putnum imported the first set of swallow-bellied Mangalitsa's and was followed by Wilhelm Kohl in 2010 with the Blonde Mangalitsas.
